Homemade Lemon Extract

  • 1 lemon, zest of
  • 1 tsp sugar
  • 1/2 cup vodka


  1. Combine the zest, sugar and vodka in a lidded glass jar.
  2. Shake the bottle once a day for at least a month and preferably two.
  3. Strain the finished extract through cheesecloth, a coffee filter or a flour sack towel to filter.
  4. Place in a dark bottle.
  5. Store in a cool, dark location.

Notes: Stay away from the pith as it is bitter.  Alternatively, just pour off a small portion for use and allow the rest to continue steeping.  If you do this, replace what you used with fresh vodka and it will last a bit longer.  But you will eventually have to use new zest.
