Roasted Red Pepper Butter

  • 1/4 cup chopped roasted red pepper
  • 2 green onions, chopped
  • 1/8 tsp salt
  • 1/2 cup butter


  1. Drain off any liquid from the peppers.
  2. Combine ingredients in your food processor.
  3. Pulse till combined.
  4. Put it onto a piece of wax paper.
  5. Form it into a log.
  6. Roll it up in the wax paper.
  7. Twist the ends.
  8. Put it in the freezer to re-solidify.

Notes:  The liquid in the peppers is problematic and does not integrate with the others as well.  Drain off as much as you can and freeze that so the butter doesn’t become crumbly.  It might be better to just put it in a covered bowl and use it from there instead of trying to make it into a log.
