Watermelon Salsa

  • 1-1/2 tsp lime zest
  • 1/4 cup fresh lime juice
  • 1 tbsp sugar
  • ~ pepper, Freshly ground
  • 3 cup chopped watermelon, seeded and finely chopped
  • 1 cucumber, peeled, seeded and diced
  • 1 mango, peeled and diced
  • 1 to 2 jalapeno pepper, seeded and minced
  • 1 red onion, small, finely chopped
  • 8 basil or cilantro leaves, fresh , finely chopped
  • 1/2 tsp garlic salt
  • ~ Tortilla or pita chips, for serving


  1. Stir together the lime zest, lime juice, and sugar.
  2. Lightly salt and pepper.
  3. Add the watermelon, cucumber, mango, jalapeno, onion and basil.
  4. Toss gently.
  5. Chill the salsa until ready to serve.
  6. Add the garlic salt just before serving.

Notes:  Serve with pita chips or corn chips, or serve on top of steak, chicken, pork, or fish.
