Zucchini Salsa

  • 1 cup tomatoes, vine-ripened, medium, chopped
  • 1 cup zucchini, medium, cubed small
  • 1/4 cup onion, finely chopped
  • 1/4 cup cilantro, fresh, finally chopped
  • 1/4 cup mint, fresh, finally chopped
  • 1 lime,  juice of
  • 1 tbsp jalapeños, sliced, minced, pickled
  • 3/4 tsp salt, kosher
  • 1 clove garlic, minced


  1. Combine all of the ingredients in a medium bowl.
  2. Mix together well.
  3. Refrigerate the salsa for at least one hour before serving.

Notes:  A salsa with a good texture and tastes great.  Another way to use overly-bountiful zucchini from your garden.
